Creamy Mushroom Pasta - (Tri colour Rotini Pasta) - Mushroom Pasta in White sauce

Mushroom Pasta is made with Button Mushrooms in Creamy White Sauce.Mushrooms when blended with white sauce Pasta, tastes awesome.I used Tri colour Rotini Pasta  for this Recipe.Mushrooms are an ideal low-energy diet for diabetics. Mushrooms have no fats, no cholesterol, very low levels of carbohydrates, high protein content, and a wealth of vitamins and minerals. They also contain a lot of water and fiber. Moreover, they contain natural insulin and enzymes which help the breaking down of sugar or starch in food. Mushrooms are a rich source of calcium, which is an essential nutrient in the formation and strength of bones. Now we learn to make Mushroom Pasta.

Ingredients

Pasta - 2 cups.
Button Mushrooms - 15.
Milk - 2 cups.
Onions - 2.
Garlic - 4.
crushed Pepper/Pepper Powder - As per taste.
All Purpose flour/Maida - 2 tbsp.
Salt - As Per taste.
Butter - 2 tbsp.
Oregano - 1 tsp.(for Garnishing).
cheese - 2 tbsp(grated).

Preparation


How to cook Pasta

    Take the water in wide vessel and bring needed water, to rolling boil, then add Pasta, cook till pasta is soft and firm. stir now and then, to avoid pasta gets sticking  to a vessel. Then drain it in a colander, and Pour cold water over it, to avoid it getting cooked further.

How to clean the Mushrooms
  
   Take a bowl, add mushrooms and 2 tbsp of Maida/All purpose flour, mix well. Make sure that flour coats well in Mushrooms.Then add needed water to it , rinse the mushrooms, then change the water, again rinse it, drain the water completely and cut into desired shapes.


  • Clean the Mushrooms and cut into desired shapes.
  • chop the onions and garlic, and keep it aside.

Method

  • Heat the butter in kadai, when it melts, add Garlic.When Garlic turns golden brown colour, add onions.


  • When onions turns golden brown colour, add Mushrooms. Saute mushrooms.Mushrooms oozes water.
  • When mushrooms are completely cooked, and water oozed by it,is completely absorbed, add Maida.


  • saute it. Make sure that mushrooms coats well in Maida.
  • Add  1 + 1/4 cup of Milk.keep stirring, till it coats well with ladle, as shown in the Picture.


  • Add Cooked Pasta,crushed Pepper & salt. Mix well.
  • Add Remaining Milk, mix for few seconds, till it gets creamy consistency.
  •  Garnish with Oregano .Top it with Grated cheese.
Notes
  • you can add veggies like carrots or capsicum before adding mushrooms.
  • I used tri colour Rotini Pasta, you can use any pasta type.
  • I used crushed Pepper. you can use Pepper Powder also.
  • I used 2 cups of milk, you can adjust the quantity of Milk, as you desired.
  • Serve hot.

Easy Oats Pongal - Oats Ven Pongal - Oats Pongali

Oats Pongal is a healthy and filling breakfast Recipe.Oats are diabetes-friendly.It is an alternative for gluten free diet. Oatmeal is high in fiber, which is heart-healthy &  make you feel  fuller for a longer period of time.I learned  this recipe from my cousin Radha. it came out well. Now we learn the steps to make healthy and filling Pongal Recipe.


Oats Pongal

Preparation Time: 5  minutes.

Ingredients

Oats - 1 cup.
Moong dal - 3 tbsp.
water - 2 (for cooking oats) + 1/2 (for Moongdal)
Cashews - 5 - 6. 
turmeric - a generous Pinch.
salt - As needed

To Temper

Cumin seeds - 1/4 tsp.
Pepper corns - 1/2 tsp.
curry leaves - 1 sprig.
Ginger - 1/2 inch (chopped) 
Ghee - 2 tsp.

Preparation

  • Cook the Moongdal, with 1/2 cup of water, & a pinch of turmeric.( Make sure that water soaks completely in moongdal).you can pressure cook it for 3 whistles or you can cook in kadai, with needed water till it turns  soft and mushy.
  • Dry Roast the oats in a pan, till it lightly changes the color and also you get nice smell of oats.
Method
  •  Take 2 cup of water in a pan, when it starts boiling add oats, cook in a medium flame till oats is cooked. it takes 2 -3 minutes to cook.

  • When the water is almost absorbed, add cooked moongdal mix well.stir till,till  water is completly absorbed and it reached pongal consistency.Add salt give a quick stir.
  • In a mean time fry the cashews in a ghee till it turns golden.
  • Then remove the cashews from pan, and add cumin seeds, pepper corns, curryleaves ,chopped ginger, in one go. Saute for few seconds till you get, nice aroma, then switch off the flame.Then pour the tadka over pongal.
  •  Garnish with cashews. Serve hot with chutney or sambar.


Notes

  • you can also crush the cumin seeds and pepper corns coarsely. 
  • Serve Pongal  warm.

Eggless Pancake Recipe - Easy Spongy Fluffy Pancakes - With step wise Pictures

Pancakes is a authentic  American Breakfast Recipe. It is a simple breakfast recipe, can be easily made during busy mornings. Pancakes are eaten plain, or it can be topped with butter or fruits of your choice, and served with honey or maple syrup.I had this pancake for the first time in ihop restaurant, when we went to disney world. it tasted awesome. it could be made with available ingredients in home. it is also a very simple bachelor recipe.





Eggless Pancakes Recipe 

 Prep Time : 5 min.
 Cook Time :2 min per Pancake

Ingredients

All Purpose Flour - 1 cup.
Salt - 1/2 tsp.
Sugar - 1 tsp.
Baking Powder - 1 tsp.
butter - 2 tbsp.
oil - 1 tbsp.
Milk - 1 cup.
Vanilla Essence - 1 tsp.(optional)
Water - 1 tbsp.



Method
  • Take a Mixing bowl  add All Purpose Flour,salt,sugar,baking powder mix well, then add milk,oil, 1 tbsp of melted  butter,vanilla essence and water.mix Gently.Now you get thick batter consistency. Let it  set aside for 5 minutes.

  • Heat the iron skillet or dosa pan, when it is hot, take a ladle full of batter and just pour it on tawa. don't spread it. it will spread on its own.cook it in a medium low flame.
  •  When pancakes gets golden brown colour, and also it gets holes on it. it is the right time to flip the pancake.

  • When both sides of pancakes are cooked, remove it from tawa.Serve hot.


Notes 
  • Top with butter or fresh fruits of your choice like strawberry, blueberry,apples, banana or  honey or  maple syrup, or  caramel syrup or chocochips  or  nuts.you could select the toppings entirely based on your taste buds.
  • Adding Vanilla Essence is optional, it gives extra flavour to pancake.
  • it is not necessary to Grease the skillet since it is pancake batter.
  • For healthier version you could use wheat flour instead of All purpose flour, add milk according to consistency of batter.
