Chakka varattiyathu - Jack fruit Halwa

Chakka Varatti is a Jack fruit preserve made from Ripe Jack fruit,Jaggery & little Ghee. "chakka" means Jackfruit & "varatti" means cook continuously until water content in it is Completely dried up.
One of our family friend gave two big jackfruit from their Garden.we distributed it,  a lot throughout the apartment. still we had some more pulps, so I planned to do jackfruit halwa.My Grandmother makes this halwa,often during Jackfruit season.I hope jackfruit season will be march to  july.When we went to karnataka trip at month of march, we got sweet ripe jackfruits everywhere.



Chakka Varatiyathu

 Prep Time : 10 min. 

Cook Time : 30  minutes.

Ingredients

Jackfruit - 3 cups. (I used 25 jackfruits)
Jaggery -  1 cup.
Ghee - 2 tbsp.


Preparation

Remove the seeds & fleshly layer of jackfruit & chop the jackfruit into small pieces. (you get 3 cups from 25 jackfruits, quantity may vary according to size of jackfruit).


Method
  • Pressure cook the jackfruit for 3 whistles with needed water,such that chopped jackfruit should immerse in water. (I used nearly 2 cups of water).

  • In  kadai, add jaggery with little water & heat till the jaggery melts & jaggery syrup becomes little thick.Then filter it to remove impurities.Now jaggery syrup is ready.
  • After the pressure subsides, open the lid & then transfer cooked jackfruit to kadai,let it cook for few minutes till the water in it is drained,then add jaggery syrup. Stir in medium low flame for few minutes till it is thick.

  • when it is almost thick add ghee little by little, stir continuously till it leaves the sides of kadai.It takes nearly 10 minutes to reach the stage of rolling ball consistency.

  • when it is not sticky to pan & reaches rolling ball consistency, switch off the stove.

Notes

  • Add little water to melt the jaggery. Melt it, till it is just thick.
  • Add Ghee after the halwa is almost thick.
  • once it becomes thick, stir continously till it leaves the sides of kadai.

Instant Wheat flour halwa - Easy Atte ka Halwa - Easy Halwa Recipe

Atte ka Halwa is an Easy Halwa Recipe, made with Wheat flour,Ghee and Milk. This can be prepared within 10 minutes. If your friends or relatives comes to your home  you can prepare this quick dessert in no time.This is a handy halwa. if you have sweet craving,this is an instant sweet Recipe.








                       

       Easy  Atte ka Halwa

Prep Time : 2 - 3 minutes. 
Cook Time : 9 minutes .

Ingredients

Wheat flour - 1 cup.
Ghee - 1/2 cup.
sugar - 1 cup.
milk - 2 cup.
cashews - 10(broken into pieces).

 





Method


  • Take a thick bottomed kadai, add 1/2 cup of ghee, then add cashews, when cashews, turns golden brown colour, add wheat flour.


  • When wheat flour becomes slightly  brown and when  you get good smell of wheat flour,add milk little by little and stir well.


  • Finally add sugar, and mix till it leaves the sides of kadai.Now wheat halwa is ready to serve.

Fried Gram Halwa - Pottukadalai halwa - Putnala Pappu Halwa

Fried Gram halwa, is an Authentic Vysyas Recipe, made with fried Gram, Rice , Coconut & Jaggery as Ingredients.I am a big fan of this Halwa.  I learnt this halwa from my Grand Mother. Fried Gram when blended with Jaggery,Rice & Coconut tastes yumm.Even the beginners can try this Recipe.


Ingredients
Fried Gram(Putnala Pappu) - 1 cup.
raw rice - 1/4 cup.
coconut - 1/4 cup.(Grated)
Jaggery - 3/4 cup.
Ghee - 2 tbsp.
 
Preparation
 Soak the raw rice for  2 hours.

Method
  • Grind  soaked  raw rice,fried Gram,coconut into a fine paste with needed water.Let the consistency be Moderate. if it is thick, it won't get cooked inside, if it is too watery it takes more time to cook.
  • Heat  the Ghee in a kadai, add the ground paste.
  • Add the Grated jaggery, Mix well.
  • stir continuously, until it leaves the sides of kadai.
  • Transfer the halwa to  the plate & level it.
  • when it is little bit warm, draw lines into desired shape & serve.

Ashoka Halwa (Thiruvaiyaru Style) - Easy Ashoka Halwa

      Ashoka Halwa is a Popular Sweet Recipe from  Thiruvaiyaru, Tanjore District. This Halwa is made with Wheat flour & Moong dal   as a main Ingredient. Aromatic Roasted Wheat flour, when blended with Cooked Moong dal tastes yumm. This is an Easy Halwa Recipe, often we make when Guest Arrives our Home.






Ingredients

Wheat Flour - 1 cup.
Moong dal - 1 cup.
Ghee - 3/4  cup.
Cashew nuts - 15 pieces.
Food color - Generous Pinch.(optional)
Sugar - 2 cup.

Preparation

Pressure Cook the moong dal  with needed water, and Mash it, till soft. If not cooked well, then grind it in a blender to a Smooth Paste.(for 1 cup of Moong dal , you can add 4 cups of water).

Method
  • Take a Kadai, add Wheat flour,Ghee and Cashews. Mix well, without lumps.
  • Now switch on the stove, keep the flame to medium low. saute till Cashews turns little Golden brown, and also you get nice aroma of Wheat flour.


  • Now this is the right stage to add Sugar & Cooked Moong dal. stir well till the sugar Dissolves.


  • Then dissolve food color in 1 tbsp of water, and add to it.Mix well.
  • When it Reaches the Halwa consistency &
     when it leaves the sides of Kadai, switch off the flame.

Notes
  • Add 4 cups of water to Moong dal for Softer Cooking,If Moong dal is not cooked well, Halwa won't tastes Good.
  • if cooked moongdal has water,you can add that water also, while making halwa, to Get soft smooth Texture.
  • Adding Food colour is Optional. I used Pink color Agent, you can Use any other colour.
  • Sauting Wheat flour is also important step. Saute in Medium flame, along with cashews and Ghee, when cashews changes the color to light Golden brown,this will be the Right stage to add other ingredients.
